Bisnok Festival

BISNOK (coined from the words Bisaya and manok), the grilled native chicken, is the famous delicacy that the southwestern town of Dumanjug is known for. The chicken is a domesticated red junglefowl species that is originally from South and Southeast Asia. They have also partially hybridized with other wild species of the junglefowl . The Bisayang manok as what the native chicken is called in Cebu is directly descended from the red junglefowl called in Cebuano as manok ihalas. Performed as a street spectacle in celebration of the fiesta every 3rd of October in honor of the town’s patron saint, San Francisco de Asis (St. Francis of Assisi), the dance steps mimic the characteristics of the chicken such as scratching, perching and courting movements and its preparation in making inasal nga manok.
